Gluten-Free Oatmeal Raisin Cookies

I was diagnosed with a gluten-intolerance when I was a senior in high school and have had to adjust to a gluten-free diet. I never realized how long the list would be of things that I cannot eat! I have worked at my favorite recipes to get them to the point where no one could tell that they were gluten-free at all. My husband has been a good sport and sampled all my recipes until I get them right! 

This oatmeal chocolate chip cookie recipe was adapted to be gluten-free. Unlike most gluten-free cookies, they do not lack the fluffy texture and smooth consistency! They make a few dozen cookies, and store well. You could also half the recipe or freeze some of it for another time. They are the perfect snack to have around!

Gluten-Free Oatmeal Raisin Cookies
1 C. Butter 
3/4 C. Sugar
3/4 C. Brown Sugar
2 Eggs
1 tsp. Vanilla
1 tsp. Salt
1 tsp. Baking Powder
1 1/2 C. Gluten-Free Flour Mix
1/2 tsp. Xanthan Gum
3 C. Oatmeal
Raisins

Mix shortening and sugars and then add all other ingredients. Bake at 350 degrees for 7-9 minutes. 

Note: For a healthier alternative substitute vegetable oil for butter and banana or applesauce for sugar. When substituting the banana or applesauce for sugar, add less than the amount called for at first and add more in as needed. Otherwise the recipe has a more liquid-substance.
